Sushi Rice (Sumeshi)

  • 3 Cups Japanese Rice (or California Rice/Sushi Rice)
  • 90 ml Rice vinegar
  • 3 tablespoons Sugar
  • 1/2 teaspoons Salt
  • 1 piece of dried Konbu – optional


  1. Wash rice really well
  2. Let rice set aside with water for 30-60 minutes before cook rice
  3. Cook rice (with dried konbu if you want) using a Rice cooker (reduce amount of water than usual, so rice is a little harder than usual)
  4. When rice is cooked, let it steam for about 15 minutes
  5. While rice is cooking, make Sushi vinegar
  6. Mix Rice vinegar, Sugar, Salt in a small pot and heat until sugar is melted
  7. Bring cooked rice to a large bowl, and add Sushi vinegar and mix well
  8. Use a fan to cool down the rice until rice becomes room temperature
